Grain-Free Bread

Over the summer I had to go on a special diet to help heal my gut microbiome. This was not the most pleasant time for me because I had to remove a lot of possible gut irritants such as gluten, grains, dairy.. the list goes on. During this time I learned a lot about the foods I was eating and really tried to experiment with making things that I usually wouldn’t. One of these recipes was this grain-free paleo bread. I originally made it out of desperation for something that resembled bread, but soon discovered that I might actually love it more than regular bread! Most of the time, making bread can be a challenging task, but not this recipe. It is super simple, minimal ingredients, and turns out absolutely perfect.

Ingredients:

  • 1 1/2 cups of almond flour

  • 1/4 cup of flax meal

  • 5 eggs

  • 1/4 cup coconut oil, melted

  • 1 tbsp apple cider vinegar

  • 1 1/2 tsp baking soda

  • 1/2 tsp salt

  • Seeds of choice to sprinkle on top if you desire. Recommended: pumpkin seeds, sunflower seeds, chia seeds, hemp seeds, sesame seeds, flax seeds.

Instructions:

  1. Preheat oven to 350.

  2. In a large bowl combine almond flour, flax meal, baking soda, and sea salt until smooth.

  3. Add in all wet ingredients until well combined.

  4. Grease bread dish (9x5) and add mixture to it. Keep in mind that it will rise!

  5. Add seed toppings of choice.

  6. Bake for 45 minutes.

Make it sweet: add almond butter and honey or strawberries.

Make it savory: add mashed avocado with salt and pepper.
